Ingredients:
Makes 12 muffins
2 2/3 cup all-purpose flour
1 tbsp. baking powder
1 tsp. salt
1/2 cup sugar
2 large eggs, beaten
1 cup milk
1/4 cup vegetable oil
1/2 tsp. lemon peel, grated
1 cup fresh or frozen blueberries
2-3 tbsp. sugar
Sift flour, baking powder, salt, and sugar. In a medium bowl add the beaten eggs, milk, vegetable oil, and grated lemon peel to the flour mixture. Stir till the dry ingredients are moistened. Then gently fold in the blueberries. Spoon into a muffin pan and sprinkle with sugar.
Bake in a preheated 375-degree oven for 20- 25 minutes.
