2 cups fresh or frozen blueberries
1/4 cup sugar
pinch of salt
1/2 tsp. lemon juice
3 slices French toast
1/2 tsp. cinnamon
Cook blueberries, sugar, salt and lemon juice over low heat for 5 minutes. Pour into shallow baking dish and arrange slices of French toast on top (cut the slices in half as necessary for a better fit).
Sprinkle with confectioners sugar and cinnamon. Cover and bake in preheated 425-degree oven about 20 minutes.
Optional: Serve with a dollop of low-fat vanilla yogurt.
